To celebrate the launch of our new book Pizza Napoli, we’re calling in the big guns, collaborating with three Napoli pizza legends who live and breathe pizza the way we do!
Second in our trio of Neapolitan icons is none other than Salvatore Salvo. He’s third-generation pizza royalty in Napoli. No big deal. Salvatore’s family have been slinging pizzas since before most of us were even born, but it’s what he’s done with that legacy that makes him a modern-day icon.
About 20 years ago, when Neapolitan pizza was going through a bit of a mid-life crisis, Salvatore decided to shake things up. He doubled down on quality, working with small, local producers and teaming up with Michelin-starred chefs to raise the bar and bring you Napoli pizza, done right. He's also just a genuinely lovely guy, who’s become a good friend to us over the years.
His August creation... The Cossaca. A stripped-back Napoli classic with serious flavour power. A base of rich San Marzano tomatoes DOP, topped with basil, a glug of extra virgin olive oil and a snowfall of finely grated Pecorino Romano. No mozzarella, no messing. As Salvatore puts it: “Sometimes, the old-school hits hardest.”
